I've been seeing countless pictures on Pinterest about loaded smashed potatoes, and have been dying to try it out. Last night, my dad wanted a bacon dish, and so I decided to finally attempt this recipe. It looked easy enough on the blogs, but I found that smashing the potatoes to best hold all the toppings was incredibly hard. Nevertheless, although messy, the dish tasted amazing.
Loaded Smashed Potatoes (50 minutes) (Serves 2)
Ingredients:
-1 pound red potatoes
-olive oil
-salt and pepper
-1/2 cup sliced scallions
-1/2 cup sharp white cheddar shredded
-2 strips bacon
1) Boil a large pot of water (enough water to cover the potatoes). Drop in potatoes. Wait for the water to boil again, and then reduce the heat to a simmer for 25 minutes until you can easily push a fork through the potato.
2) Preheat the oven to 450 degrees F. Cut the potatoes into two, and smash them using a spoon. Place on a baking sheet.
3) Add scallions, oil, salt, and pepper to potatoes. Bake on top shelf of oven for around 20 minutes until potatoes begin to brown.
4) Cook the bacon. Cut into inch-sized pieces.
5) Sprinkle cheese evenly onto potatoes, and continue to bake for another minute.
6) Remove potatoes from oven, and top them with bacon. Serve and enjoy!
