Chocolate Meringues

I've always been a huge fan of meringues. The lightness of this snack makes me feel less guilty about eating so much. So this week, I was happy to discover that the recipe for meringues is actually very simple. To challenge myself a little, I added a little cocoa powder to a traditional meringue recipe, and the result was amazing; I haven't been able to stop eating them since they came out of the oven yesterday night.

Recipe
Ingredients:
-2 large egg whites
- 4 1/2 tablespoons of granulated sugar
- 4 tablespoons of confectioners' sugar
- 1 tablespoon + 3/4 teaspoon cocoa powder

1. Preheat the oven to 224°.
2. Beat egg whites on medium speed until frothy (around 5 minutes).
3. Add granulated sugar gradually and beat on high speed until stiff and glossy (about 15 minutes).
4. In a separate bowl, sift together confectioners' sugar and cocoa powder.
5. Fold into meringue mixture, while continuing to beat on high speed.
6. Line baking sheet with wax paper.
7. Use spoon to transfer meringues onto baking sheet, spacing them 1 inch apart.
8. Bake for 1 1/2 hours. Turn off heat and then allow meringues to sit in oven for 15 minutes.
9. Enjoy!
