I'm a huge Panera Bread fan. I have so many good memories there, from doing homework after school at the long table in Coolidge Corner to playing Truth or Dare on late weeknight in middle school. My favorite memories though are by far my dinners with my dad. He always orders the same thing: a You Pick Two with a Sierra Turkey sandwich and a Broccoli Cheddar Soup. Today, I attempted to recreate his and my favorite soup.
For this dish, I used this recipe: http://allrecipes.com/recipe/broccoli-cheese-soup/
The only change I made was to add a cup of julienned carrots to the soup along with the broccoli.
It wasn't quite as perfectly creamy (or unhealthy) as the original, but it's a good second choice for when I'm craving Broccoli Cheddar soup.
