Chinese Fried Rice


One of my favorite dishes that my mom cooks is her stir-fried rice. Because she has been gone for the past week, I've definitely missed her cooking, and so today, I decided to try to recreate her Chinese Fried Rice. She's taught me the recipe before, and while I did not remember every step perfectly, I'm still really happy with how my attempt came out; it tasted almost exactly the same.

Chinese Fried Rice Recipe (Serves 3) (1 hour)
Ingredients:
-3/4 cup finely chopped onion
-2 1/2 tablespoons canola oil
-3 eggs
-4 drops + 3 tablespoons soy sauce
-4 drops sesame oil
-1/2 cup frozen peas, thawed
-1/2 cup frozen corn, thawed
-4 cups cooked jasmine rice (approximately 2 cups of rice grains)

1) Add 1 tablespoon canola oil and onions to a wok. Stir-fry until the onions are brown (around 6 minutes). Remove onions from wok.
2) As wok is cooling, lightly beat eggs together with 4 drops of soy and the sesame oil.
3) Add 1/2 tablespoon canola oil and egg mixture into wok. Make scrambled eggs. Remove egg from wok.
4) Add 1 tablespoon canola oil, peas, and corn into wok. Stir-fry for 5 minutes.
5) Toss onions, eggs, rice, and soy sauce into wok. Stir-fry until rice begins to brown. Serve and enjoy!
